This cookie dough makes the best cookies if the dough are allowed to be in the refrigerator for 3-4 days before baking. However, 30 min. in the refrigerator can also be enough, if you want cookies now and not 4 days from now. Try, however, at some point, to let the dough rest for 4 days, it makes them so mush better, though it’s hard to wait.

And remember to check, that the marshmallows are gluten free.



How to:

Beat butter, cane sugar and coconut sugar / brown sugar together until it’s light and airy. Stir all the dry ingredients together and stir in the airy butter / sugar mixture. Add the egg too.

Form the dough into a ball and place in the fridge for 30 minutes. – 4 days.

Line a baking sheet with baking paper and turn the oven to 160 degrees. Set a spoon of the dough on the plate so you have 10 cookies. Bake them 10-15 min. Cool on a wire rack and store in an airtight container.
